Make someone feel really special with this easy breakfast in bed dish

Ingredients

  • 2 Herby Pittas
  • 4 tbsp olive oil
  • 120g (4oz) spinach, cooked
  • 4 medium poached eggs
  • 8 basil leaves
  • 250g (9oz) cherry tomatoes
  • 2tbsp olive oil
  • 2tbsp balsamic vinegar
  • salt
  • pepper

Method

  1. Preheat the oven to 220°C / 425°F / Gas 7
  2. Slice open the pittas, drizzle with a little oil and bake in the oven until toasted.
  3. Fry the cherry tomatoes, vinegar, oil and seasoning. Bring slowly to the boil and cook gently for 3-4 mins, without tomatoes breaking up.
  4. Place the spinach evenly over pitta halves, add the basil leaves and spoon over the tomatoes.
  5. Place the poached egg on top, season and serve immediately
