Chicken, oyster and spring onion stir-fry

Ingredients
- 125g organic egg noodles
- 2 small chicken breasts
- 1tbsp oil
- 1tbsp soy sauce
- 1tsp minced ginger
- 1tsp minced garlic
- 6 spring onions, chopped
- 85g Shiitake mushrooms, halved
- 100g broccoli, split into small florets
Method
- Cook organic egg noodles according to the packet instructions, drain and set aside.
- Heat oil in a wok and fry chicken breasts, cut into chunks.
- Add soy sauce, minced ginger, minced garlic, spring onions, shiitake mushrooms and broccoli and stir fry for 1-2 mins.
- Toss with the noodles and stir fry for 1 min to heat through.
