Chicken, oyster and spring onion stir-fry

A quick and delicious chicken stir-fry - ready in minutes and full of Chinese flavours.

Ingredients

  • 125g organic egg noodles
  • 2 small chicken breasts
  • 1tbsp oil
  • 1tbsp soy sauce
  • 1tsp minced ginger
  • 1tsp minced garlic
  • 6 spring onions, chopped
  • 85g Shiitake mushrooms, halved
  • 100g broccoli, split into small florets

Method

  1. Cook organic egg noodles according to the packet instructions, drain and set aside.
  2. Heat oil in a wok and fry chicken breasts, cut into chunks.
  3. Add soy sauce, minced ginger, minced garlic, spring onions, shiitake mushrooms and broccoli and stir fry for 1-2 mins.
  4. Toss with the noodles and stir fry for 1 min to heat through.
