Fish finger sandwich

Created by award-winning fishmonger and chef Mitch Tonks, the secret to this sarnie is the combination of soft, doughy bread and crunchy crisp breadcrumbs with tangy tomato sauce and creamy mayo.
Ingredients
- 2 slices of thick, pre-sliced bread
- Tomato sauce
- Tartare sauce or mayonnaise, whatever you prefer
- 3 fish fingers
- A squeeze of lemon
Method
- Take two slices of bread and spread one piece with tomato sauce, the other piece with tartare sauce, (you can make your own by stirring finely chopped shallots, capers and gherkins into mayonnaise)
- Fry the fish fingers until crisp, or grill them for a lower calorie meal
- Squeeze a little lemon juice over the fish fingers and sandwich them between the two pieces of bread
- Cut in half and get stuck in!
