Simple vegetable soup

Don't bother opening a tin! This simple vegetable soup is just as quick to make

Ingredients
You can use parsnip instead of potato or you can turn this simple soup into a stew just by adding a tin of tomatoes and chickpeas.
- 2 tbsp vegetable oil
- 1 onion, peeled and chopped
- 2 leeks washed, trimmed and chopped
- 1l light vegetable stock
- 1 baking potato, peeled and cut into cubes
- 2 handfuls of frozen peas
Method
- Heat the oil in a medium sized saucepan and fry the onion and leeks until soft.
- Add the stock and potato and bring to the boil. Simmer for 20 mins.
- Add the peas and bring back to the boil, then simmer for 5 mins.
- Cool slightly and blend with a food processor. Season to taste and serve piping hot with bread.
