Don't bother opening a tin! This simple vegetable soup is just as quick to make

Ingredients

You can use parsnip instead of potato or you can turn this simple soup into a stew just by adding a tin of tomatoes and chickpeas.

  • 2 tbsp vegetable oil
  • 1 onion, peeled and chopped
  • 2 leeks washed, trimmed and chopped
  • 1l light vegetable stock
  • 1 baking potato, peeled and cut into cubes
  • 2 handfuls of frozen peas

Method

  1. Heat the oil in a medium sized saucepan and fry the onion and leeks until soft.
  2. Add the stock and potato and bring to the boil. Simmer for 20 mins.
  3. Add the peas and bring back to the boil, then simmer for 5 mins.
  4. Cool slightly and blend with a food processor. Season to taste and serve piping hot with bread.
