Ingredients

This recipe is from goodtoknow user, Rebecca. 'I make muffins for a living and this is how I would make chocolate muffins. I've tried and tested this recipe and it makes the muffins really delicious'.

  • 250g self-raising flour
  • 25g cocoa powder
  • 2tsp baking powder
  • 175g caster sugar (or 125g caster sugar, 50g muscovado sugar)
  • 175ml milk
  • 2 large eggs, beaten
  • 100ml sunflower oil
  • 75g plain chocolate chunks
  • 1-2 teaspoons vanilla extract

Method

  1. Preheat the oven to 170ºC/375F/gas 5.
  2. Line a 12 hole deep muffin tray with paper muffin cases.
  3. Sift together the flour, cocoa and baking powder; stir in the sugar. Add the remaining ingredients and mix lightly together.
  4. Spoon the mixture into the prepared cases. Bake for approximately 20 mins or until golden and springy to the touch. Cool for 10 minutes; transfer to a wire rack and leave until cold.

Guideline Daily Amount for 2,000 calories per day are: 70g fat, 20g saturated fat, 90g sugar, 6g salt.

    my brother in law loxley crawshaw is climbing mount killamanjaro in january for manmillan nurses. before he can do this he needs to raise £5000. i am putting together a hamper to try and raffle off and was hoping you might be able to donate something to add to the hamper.all proceeds will go straight to loxleys just giving account. thank you katie sykes

    If u want you can replace the oil with 100g margerine. This is what I d and they taste absolutely fantastic!!!

    i made the cakes and took them in school to sell all the money is going to comic relief, the children cleared me out i have to make more for tomorrow and th enext day they are so good i tried one then two i couldnt stop, thankyou very much!!!
