This meat-free spaghetti Bolognese is so full of flavour even the meat lovers will want it too

Ingredients

Add a little less water and more veg to make a cottage pie filling or some chilli powder and red kidney beans to make a veggie chilli con carne.

  • 2tbsp vegetable oil
  • 1 onion, peeled and chopped
  • 1 red pepper (seeds removed), chopped
  • 1 aubergine, chopped
  • 1 packet of vegetarian mince
  • 1 jar pesto (green or red)
  • 2tbsp tomato puree
  • 2tsp yeast extract
  • ½ packet dried spaghetti

Method

  1. Heat the oil in a large saucepan. Fry the chopped onion, red pepper and aubergine in the oil for about 10 mins, stirring frequently, until reduced in size and softened.
  2. Add the mince and cook for a further 3 mins.
  3. Add the jar of pesto with 1 1/2 cups of water. Cover and cook for about 20 mins, until the liquid is absorbed.
  4. Add tomato puree, yeast extract and black pepper (to taste). Serve with spaghetti, cooked according to the instructions on the packet.
