Forget boring, soggy sandwiches in the park, try this ultimate sarnie, with low-fat cream cheese, salmon, avocado and roasted veg - picnics will never be the same!

Ingredients

  • 2 slices of thick, wholemeal bread
  • 1tbsp low-fat cream cheese
  • 1/2tsp chopped chives
  • 1/2 an avocado, peeled and stoned, roughly mashed with a fork
  • Lemon juice
  • 30g tomatoes (2 cherry tomatoes) roughly chopped
  • 50g roasted yellow and red peppers (1/3 medium peppers) sliced
  • 40g (1-2 slices) smoked salmon
  • A few chilli flakes
  • Black pepper to season

Method

  1. Mix low-fat cream cheese with chopped chives and spread on a slice of bread.
  2. Top with slices of smoked salmon.
  3. Mash 1/2 avocado with a squeeze of lemon juice, black pepper, chopped tomatoes and the roasted peppers, chilli flakes.
  4. Place on top of salmon (if using two pieces of salmon place one underneath and one on top of avocado filling).
  5. Spread the other slice of bread with the cream cheese and chive mixture and place on top of the sandwich.
