Boiled eggs, creamy mayonnaise, crisp lettuce and soft bread rolls - a classic sandwich for lunch, afternoon tea or picnics.


  • 4 sandwich rolls
  • 3 hard boiled eggs
  • 2tbsp low-fat mayonnaise
  • A handful of fresh, crisp lettuce leaves
  • 4 large pinches of cress


  1. Put a layer of lettuce on one side of the seeded rolls.
  2. Chop up the hard boiled eggs and mix with the mayonnaise.
  3. Pile over the lettuce and garnish with cress.
