A healthy family meal on a budget and a great dish to make if the kids bring unexpected friends round.

Ingredients

  • 1 bag frozen mixed peppers
  • 1 small punnet mushrooms, sliced
  • 1 large onion, sliced
  • 2 tins economy beans in tomato sauce
  • 1 tin economy chopped tomatoes
  • 1 bag wholewheat pasta
  • Grated cheddar cheese

Method

  1. Put a drop of oil in a frying pan, fry onions, peppers and tomatoes until soft.
  2. Heat beans and tomatoes in pan, then stir in the fried vegetables.
  3. Boil pasta as instructed on packet, rinse under water, then add all ingredients together and place in large ovenware dish.
  4. Sprinkle with cheese and bake in a hot oven until cheese bubbles.

Guideline Daily Amount for 2,000 calories per day are: 70g fat, 20g saturated fat, 90g sugar, 6g salt.

    tried this as a family of pasta lovers and too much red meat in our diet, family loved it was really tasty even without meat and very cheap 2 make in the credit crunch, thanku karen this will be a firm family favourite.
