Tangy chicken couscous

This light and tasty chicken couscous salad is perfect for summer. And it's quick to make, giving you more time to enjoy the sunshine!

Ingredients

  • 275g (10oz) couscous
  • 6tbsp Worcestershire sauce
  • 1 courgette, finely diced
  • 1 red pepper, cored and finely diced
  • 4 spring onions, finely chopped
  • 125g (5oz) dried apricots, finely diced (optional)
  • 2 tomatoes, finely chopped
  • 4 chicken breasts, cooked and cut into strips

Method

  1. Place the couscous in a large bowl and pour over the Worcestershire sauce.
  2. Add 300ml (1/2 pint) of boiling water from the kettle, mix well, then add the remaining ingredients except the chicken.
  3. Cover the mixture and leave in a cool place for at least 15 minutes.
  4. Stir in the cooked chicken and serve.
