Steamed salmon parcels

These simple salmon parcels are delicious served with a zingy lime dressing and a crunchy carrot salad on the side.

Ingredients
- 4 salmon steaks
- 2tbsp tikka masala paste
- 2tbsp low-fat. thick yoghurt
- 2 spring onions, sliced
- 1tbsp fresh dill, roughly chopped
- Juice of half a lime
- 2tbsp raita (spiced yoghurt)
- Salt and pepper to taste
- 4 pieces of foil, cut into squares (about 20cm x 20cm)
Method
- In a bowl, mix together the tikka masala paste and yoghurt.
- Add the salmon fillets and coat well with the marinade.
- Lay the spring onions in the centre of a piece of foil and place each salmon fillet on top. Sprinkle with dill.
- Carefully wrap and seal the parcels before placing on the barbecue or in a preheated oven at 180°C (350F/gas mark 4) for 15-20 mins.
- In a bowl, mix the raita and lime juice together. Add salt and black pepper to taste.
- Remove the steamed parcels from the oven or barbecue and serve with a crunchy carrot salad and raita.
