Steamed salmon parcels

These simple salmon parcels are delicious served with a zingy lime dressing and a crunchy carrot salad on the side.

Ingredients

  • 4 salmon steaks
  • 2tbsp tikka masala paste
  • 2tbsp low-fat. thick yoghurt
  • 2 spring onions, sliced
  • 1tbsp fresh dill, roughly chopped
  • Juice of half a lime
  • 2tbsp raita (spiced yoghurt)
  • Salt and pepper to taste
  • 4 pieces of foil, cut into squares (about 20cm x 20cm)

Method

  1. In a bowl, mix together the tikka masala paste and yoghurt.
  2. Add the salmon fillets and coat well with the marinade.
  3. Lay the spring onions in the centre of a piece of foil and place each salmon fillet on top. Sprinkle with dill.
  4. Carefully wrap and seal the parcels before placing on the barbecue or in a preheated oven at 180°C (350F/gas mark 4) for 15-20 mins.
  5. In a bowl, mix the raita and lime juice together. Add salt and black pepper to taste.
  6. Remove the steamed parcels from the oven or barbecue and serve with a crunchy carrot salad and raita.
