This fresh, light summer salad is perfect for al fresco dining or as a light lunch with its tasty combo of smoked chicken and papaya.

  • Serves: 4

Ingredients

For the salad

  • 100g/4oz fine green beans
  • 350g/12oz cooked smoked chicken
  • 1 small red onion
  • 1 ripe papaya
  • 100g/4oz bean sprouts
  • 150g/5oz fresh watercress

For the dressing

  • 100ml /4floz papaya juice drink
  • Finely grated zest and juice of 1 lime
  • 3tbsp extra virgin olive oil
  • 1tsp wholegrain mustard
  • 1tsp maple syrup

Method

  1. Trim the beans and cut them in half.
  2. Bring a pan of lightly salted water to the boil and cook the beans for 3 mins then drain and refresh under cold running water.
  3. Use 2 forks to shred the chicken into small pieces then peel and cut the onion.
  4. Peel the papaya, slice in half and scoop out the seeds using a small teaspoon. Thinly slice the papaya and place in a large bowl with the cooked beans, shredded chicken, sliced onion, bean sprouts and watercress. Toss together thoroughly and divide between 4 individual serving plates.
  5. To prepare the dressing, place all the ingredients in a screw top jar, shake well for a minute and drizzle generously over the salad before serving.
