Sweet potato soup

Try Michelle Marwood's favourite homemade soup. It's filling and nutritious and a great way to use up your veg.

Ingredients

  • 4 large sweet potatoes
  • 3 carrots
  • 1 red pepper
  • 2 onions
  • 8 medium size tomatoes
  • Vegetable stock

Method

  1. Peel the sweet potatoes and carrots and cut into large cubes. Boil in vegetable stock until they go soft.
  2. While that's cooking, boil some water in another pan. Chop the red pepper and score the tops of the tomatoes. Place in the pan for about 5-10 mins until you can peel away the skin then leave to one side.
  3. Fry the onions until soft. Drain the potatoes and carrots and mix all the ingredients together. Blend until you reach a smooth consistency then add salt and black pepper to taste.

    Delicious, my grandaughter who doesn't eat vegetables well liked it and ate it. Mine was a bit thick as well but used the vegetable water from the sweet potatoes to thin it.

    Tried this today- very quick and easy to make, with a lovely flavour. Mine was a bit too thick though :)
