Kids' favourite baked sandwich naan

It's a Scooby snack with a twist - veggies and meat in layers of naan. Perfect for lunchboxes or picnics!

Ingredients

  • 2 x 185g (6 ½ oz) plain naan, split in half
  • 6-8 tbsp olive oil
  • 4 rashers of bacon, cooked until crispy
  • 50g (2oz) cheddar cheese, grated
  • 2 large tomatoes, sliced
  • 1 x 185g (6oz) can sweetcorn, drained
  • 3 hard boiled eggs, sliced
  • 1 small onion, sliced and fried until golden
  • 2 tbsp prawns (optional)

Method

  1. Preheat the oven to 200ºC/400ºF/Gas Mark 6.
  2. Place a double layer of tin foil onto a chopping board.
  3. Place the first slice of naan onto the foil, drizzle with oil and sprinkle over the cheese followed by the bacon.
  4. Layer on the next slice of naan, drizzle with more oil, then add the tomatoes, onion and prawns (if required).
  5. Layer on the third naan, drizzle a bit more oil and top with eggs and sweetcorn. Top with the final layer of naan and wrap tightly in foil.
  6. Bake in the oven for 35-45 minutes.
  7. Remove from the oven, press the sandwich together tightly, using a cloth, then wrap in another piece of foil. Cool, press again and chill overnight. Serve cut into wedges.
