Ingredients

- 1 x 185g (6 ½ oz) naan bread, cut into 2cm (¼ in) cubes
- 3 large eggs, beaten
- 200g (7oz) cooked potatoes, cubed
- ½ small onion, finely chopped
- 60g (2 ¼ oz) cooked peas
- 50g (2oz) cheddar cheese, grated
- 2 tbsp olive oil
- Salt and pepper
Method
- Preheat oven to 200ºC/400ºF/Gas Mark 6 or grill.
- Mix together the naan, peas, potatoes, onions and cheese and season well.
- Heat the oil in a non-stick frying pan. Add the egg to the mixture, mix well and spoon it into the hot oil.
- Cook for 2-3 mins, then either put into preheated oven or under the grill for 10 mins until just set.
- Cool, then chill well. Cut into wedges and serve.
