Sweet and sour filo crackers

Filled with turkey, bacon, cranberries and rice, these filo crackers make a deliciously more-ish snack or starter.

Ingredients
- 250g cooked turkey, finely chopped
- 100g cooked lean bacon, finely chopped
- 50g cranberries
- 300g jar sweet and sour sauce
- 75g cooked long grain rice
- 50g butter, melted
- 6 sheets filo pastry, 36cmx30cm
- Thyme sprigs to garnish
Method
- Mix the turkey, bacon, cranberries, sweet and sour sauce and rice together.
- Lay out a sheet of the pasty and brush with butter. Lay another sheet on top and brush with butter.
- Cut the pastry into 6 squares, Place a little turkey filling into the centre of each square. Roll up the pastry from each square and squeeze the ends together, to make a cracker shape. Repeat with the remaining pastry sheets.
- Brush with melted butter and place on a baking sheet. cook in the centre of a preheated oven (200°C / 400°F / gas mark 6) for 10-15 mins until golden and crispy. Garnish with the chopped thyme sprigs.
