Prawn, tomato and pasta salad
Make lunch fun with this prawn salad mixed with cherry tomatoes, peppers and pesto pasta.

Ingredients
Mix the stir-in sauce with low-fat yogurt to make a delicious dressing. Make up your own version of prawn cocktail with shredded lettuce, juicy prawns coated in the dressing and shredded salad onions.
- 175g pasta shapes, such as penne or farfalle
- 150g pot cherry tomato and pesto stir-in sauce
- 4tbsp low-fat Greek-style yogurt
- 200g large cooked, peeled prawns
- 4 salad onions, thinly sliced
- ½ cucumber, chopped
- 1 red and 1 yellow pepper, deseeded and chopped
- 1 Romaine or cos lettuce, roughly chopped
- Handful of fresh basil leaves
Method
- Cook the pasta shapes in lightly salted boiling water for 8-10 mins, or according to pack instructions.
- Tip the stir-in sauce into a large salad bowl. Mix in the yogurt, then add the prawns, salad onions, cucumber and peppers.
- Rinse the pasta with cold water to cool it quickly, drain thoroughly, then add to the salad bowl and toss with the other ingredients.
- Serve with lettuce leaves and garnish with a few fresh basil leaves.
