Aubergine and feta puff fingers

With easy-to-roll pastry, this tasty starter or snack with fresh thyme and chutney is quick and simple.

Ingredients
- 1 x puff pastry sheet
- 1 aubergine, sliced
- Olive oil for drizzling
- 4 generous tsp of red onion chutney/ marmalade
- 100g feta cheese
- Few sprigs of fresh thyme
- Beaten egg to glaze
Method
- Preheat the oven to 220°C (200°C for fan-assisted / 425°F/ gas mark 7).
- Lay the aubergine slices on a baking tin, drizzle with olive oil and scatter with a little thyme. Roast for approximately 15 mins until just tender and then cool.
- Unroll the pastry sheet and cut into 4 equal strips. Lay pastry pieces on a lined baking sheet and spread the chutney down the centre of each, leaving a good border all round.
- Top each strip with overlapping aubergine slices and crumbled feta then brush the borders with beaten egg and bake for 10-12 mins. Scatter with remaining thyme before serving.
