This roast chicken with garlic and herbs is not only really tasty and filling, it's also dairy-free, gluten-free and egg-free.

Ingredients

  • 75g (2½oz) dairy-free spread
  • 1.8k (4lb) whole roasting chicken
  • Cloves of garlic, finely chopped
  • 1tbsp fresh parsley, chopped
  • 1tbsp fresh thyme, chopped
  • 1tbsp fresh rosemary, finely chopped
  • Pinch of salt and ground white pepper
  • 35cm/14" roasting tray

Method

  1. Pre-heat the oven to 190°C (375°F / gas mark 5). Meanwhile, combine the spread, garlic, chopped herbs and salt and pepper.
  2. Insert a dessert spoon at the neck end of the chicken between the skin and the flesh, release the skin over the breast of the chicken then spoon in the herb mixture. Make sure that it is evenly distributed it under the skin then fold the excess skin under the chicken and place in a roasting tin.
  3. Roast in the hot oven and baste with the flavoured chicken juices during cooking. Cook for approximately 1 hr 40 mins or until the juices run clear. Serve with saffron potatoes.
