Sloes, the fruits of the blackthorn tree, are bitter with a tough, blueish-black skin which has a definite a bloom to it. Country dwellers say they're best after a frost, but sloes can be ready to pick by the end of September through to November. Don't pick if they are dry and shrivelled.

The shaking is only to dissolve the sugar, when it's dissolved stop! You don't want to end up with sloe a puree, as happened to an enthusiastic friend of mine. A few drops of almond essence works just as well as whole almonds. If you substitute vodka for gin you end up with alcoholic cough medicine (linctus simplex) which I understand some people love - it takes all sorts!
