Clarissa's boozy sausage recipe makes a cheap and comforting dish for an evening by the fire, or a kitchen supper with friend

Ingredients

  • 900g sausages
  • 4 onions, sliced
  • Oil
  • 1 garlic clove, chopped
  • Salt and pepper
  • 1 x 400g tin tomatoes
  • Bottle of beer or bottle red wine

Much is down to the quality of the sausages, but that?s not a problem nowadays with so many butchers making good ones. Choose ones whose skins are well filled (but not overfilled or they will burst).

Method

  1. Preheat the oven to 180C/350F/Gas Mark 4.
  2. In a heavy flameproof casserole, brown the sausages and set aside. Then fry the onions in a little oil until coloured. Add the garlic and cook a little longer. Arrange the sausages on top, season, pour on the tomatoes and the alcohol and cook gently in the preheated oven for about 1 hour.
  3. Serve with lots of mash, flavoured with cheese or horseradish or mustard.
