Ingredients

The cookies look even more attractive using lighter and darker shapes together

  • 40g rolled oats
  • 50g Coco Pops Moons and Stars
  • 80g wholemeal self raising flour, sifted
  • 50g Demerara sugar
  • 80g sunflower margarine

Method

  1. Preheat oven to 180°C (350°F), Gas Mark 4. Grease and line a large baking tray.
  2. Place 30g of Coco Pops Moons and Stars in a plastic bag and crush very finely with a rolling pin.
  3. Combine thoroughly in a bowl with oats and sifted flour. Add any bran remaining in sieve into the bowl.
  4. Melt the margarine and sugar in a large saucepan over a gentle heat, stirring constantly until the mixture starts to simmer and the sugar has almost dissolved.
  5. Take off the heat and add the dry ingredients, thoroughly mixing together with a wooden spoon (the mixture will appear greasy but that's OK).
  6. Press the mixture into balls (approx 1 tbsp each) and space well apart on baking tray, flattening slightly.
  7. Decorate with remaining moon and star shapes, pressing into mixture and flattening until about 7cm in diameter.
  8. Bake in the top half of a moderate oven at 180°C for approx 10 minutes or until lightly golden.
  9. Leave on tray to cool for 5 minutes before transferring to a wire rack to cool.
