This delicious casserole couldn't be quicker or easier to make - and the whole family will love it!

Ingredients

  • 25g unsalted butter
  • 2 leeks, washed and sliced
  • 100g button mushrooms, halved
  • 300g ham, cut into 1cm pieces
  • 295g tin condensed cream of mushroom soup
  • 100ml semi skimmed milk
  • 500g King Edward potatoes, thinly sliced
  • ½ tsp paprika

Method

  1. Preheat the oven to 200ºC/Gas Mark 6.
  2. Melt the butter and fry the leeks and mushrooms for 5 minutes. Place in a casserole dish with the ham, soup and milk, stir well.
  3. Top with the potato and sprinkle over the paprika. Bake for 40 minutes until tender and golden.
