Mushroom, ham and potato casserole

Ingredients
- 25g unsalted butter
- 2 leeks, washed and sliced
- 100g button mushrooms, halved
- 300g ham, cut into 1cm pieces
- 295g tin condensed cream of mushroom soup
- 100ml semi skimmed milk
- 500g King Edward potatoes, thinly sliced
- ½ tsp paprika
Method
- Preheat the oven to 200ºC/Gas Mark 6.
- Melt the butter and fry the leeks and mushrooms for 5 minutes. Place in a casserole dish with the ham, soup and milk, stir well.
- Top with the potato and sprinkle over the paprika. Bake for 40 minutes until tender and golden.
