Lesley's wonderful soup couldn't be quicker or easier to make - and it's packed with healthy vegetables

Ingredients
- 2 tins ratatouille
- 1 tin butter beans
- Chilli powder, to taste
- A small handful of fresh coriander (optional)
Method
- Empty the tins of ratatouille into a pan, and warm gently.
- Add the tin of butter beans, filling the empty tin with water. Add this water and bring the whole mixture to a gentle boil.
- Add chilli powder to taste.
- Remove half the mixture and blitz til smooth, then return to pan.
- Serve with warm fresh bread and a sprinkling of fresh coriander, if you like.
