Chocolate mousse

This chocolate mousse uses sweetener, chocolate essence and skimmed milk to make it a little lower in fat!Serves: 6
Prep time: 45 mins plus cooling
160ml skimmed milk
60g skimmed milk powder
60g cocoa powder
13g granular sweetener
4tsp (12g) concentrated chocolate essence
½ tsp vanilla essence
11g gelatine
90ml water
2 egg whites
Pinch of cream of tartar
1. Whisk the skimmed milk powder in to the cold milk. Warm the milk mix and just before boiling, whisk in the cocoa powder. Allow to cool slightly.
2. Mix in the sweetener, vanilla and chocolate essence then make up the gelatine according to packet instructions. Add to the chocolate mixture. Leave in a cool place until the mixture thickens, but do not let it set.
3. Prepare the egg whites just before use. Pour the egg whites and a pinch of cream of tartar into a large bowl and whisk until firm. Fold into the mixture a spoonful at a time.
4. Divide the mixture between glasses or pour in to a large serving bowl.
