Hot cajun sardines

Give ordinary sardines a fabulous chilli kick with this delicious recipe that's ready in minutes

Ingredients

  • 455g (1lb) sardines, cleaned and heads removed
  • 1 x 15ml spoon (1 tbsp) Cajun spices
  • 1 x 5ml spoon (1 tsp) crushed chillies
  • 1 x 15ml spoon (1 tbsp) lemon juice
  • Salt, to taste
  • Lemon wedges, to garnish

Method

  1. Preheat the grill.
  2. Mix the Cajun spices together with the chillies.
  3. Place the fish into a shallow dish. Sprinkle over the lemon juice and add the spice mixture. Season.
  4. Cook under a hot grill or barbecue for 8-10 minutes, turning once.
  5. Garnish with lemon and serve with crusty bread and a cucumber and tomato salad.
