Hot cajun sardines

Give ordinary sardines a fabulous chilli kick with this delicious recipe that's ready in minutes

Ingredients
- 455g (1lb) sardines, cleaned and heads removed
- 1 x 15ml spoon (1 tbsp) Cajun spices
- 1 x 5ml spoon (1 tsp) crushed chillies
- 1 x 15ml spoon (1 tbsp) lemon juice
- Salt, to taste
- Lemon wedges, to garnish
Method
- Preheat the grill.
- Mix the Cajun spices together with the chillies.
- Place the fish into a shallow dish. Sprinkle over the lemon juice and add the spice mixture. Season.
- Cook under a hot grill or barbecue for 8-10 minutes, turning once.
- Garnish with lemon and serve with crusty bread and a cucumber and tomato salad.
