The flavours of sardines and soy sauce mix beautifully in this easy recipe that you can prepare in advance

Ingredients

455g (1lb) whole sardines, mackerel or snapper, cleaned and scaledFor the soy marinade:

  • 2 x 15ml spoon (2 tbsp) dark soy sauce
  • 2 x 15ml spoon (2 tbsp) dry sherry
  • 1 garlic clove, crushed
  • Large pinch five spice powder
  • Black pepper
  • 1 x 5ml spoon (1 tsp) sesame oil
  • 1 x 10ml spoon (1 dsp) clear honey

Method

  1. Preheat grill or barbecue.
  2. Place the fish onto a chopping board. Make three diagonal slashes across both sides of the fish. Place into a large shallow rectangular dish.
  3. Mix the marinade ingredients together and pour over the fish. Cover and leave to marinate in a cool place for 1-2 hours.
  4. Place the fish onto a prepared grill or barbecue and cook for 5-7 minutes on each side.
  5. Serve with roasted chillies, whole garlic and fresh rosemary.
