We know what it's like when you're browsing a site with as many recipes as ours. You find a brilliant recipe, want to make it again, but can't remember how you found it!

These delicious low-fat muffins couldn't be easier to make. Pop them in the oven and enjoy them with a cup of tea!

Ingredients

  • 175g (6oz) oatmeal
  • 1 tsp bicarbonate of soda
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 175g (6oz) wholewheat flour
  • 470g jar apple puree
  • 1 eating apple, diced
  • 4 egg whites, lightly beaten
  • 200ml (7fl oz) honey
  • 200g (7oz) raisins
  • 150ml low fat natural yogurt
  • Sunflower oil

Method

  1. Sieve dry ingredients into a large mixing bowl. Add apple puree, diced apple, egg whites, honey, raisins and yogurt. Stir gently until all the flour is incorporated.
  2. Pour batter into 12 greased muffin tins.
  3. Bake in pre-heated oven 180C/350F/Gas Mark 4 for 25 minutes or until lightly browned. Serve warm or cold, spread with low-fat spread.

Can I use whole eggs rather than egg whites - what would I do with the yolks?

Really lovely. I recommend using half the ingredients above as half made 15 full sized muffins!! ( l have noticed a lot of the recipes cakes/soups you could easily half the ingredients as you get more than what is stated) I also weight watchered the points ( new points) and these work out 2 points each so very good. I prefer them cool rather than warm.
