Turn a meal like roast beef and Yorkshire pud into a high-fibre dinner by serving it with this bubble and squeak.

Ingredients

To add more fibre, you could use wholemeal flour in your Yorkshire pudding batter e.g. half wholemeal to half white flour ratio. The white flour keeps the batter light, while the wholemeal gives your body a great fibre boost. The Yorkshire puddings might be a bit denser and rise less, so if you prefer, reduce the ratio of wholemeal to white flour. Fibre content per portionThe approximate fibre content of a standard roast beef and Yorkshire pudding meal is 4g. The approximate fibre content of this high-fibre version is 10 to 13g.

  • 200g potatoes, cooked or raw
  • 100g carrots, cooked or raw
  • 100g parsnips
  • 150g squash
  • 75g spring greens or dark green cabbage
  • 2 tbsp olive oil
  • 1 tsp creamed horseradish
  • Freshly ground black pepper

Method

  1. If the vegetables are uncooked, scrub them and, if necessary peel them, but it's good to keep the peel on, as this adds some fibre.
  2. Steam or boil, the vegetables until soft but not mushy (bearing in mind that cabbage only needs a couple of minutes).
  3. Drain and dry well. Keeping the cabbage separate, pop the other vegetables into a large bowl and pound into a mush, using a masher. Add the cabbage, olive oil and horseradish and season with freshly milled black pepper.
  4. Place in a greased or non-stick 25.5 x 35cm baking tray. Preheat the oven to 220°C/gas mark 7. Place the baking tray on the top shelf of the oven and bake for 20-30 mins, until crisp on top.
