Sirloin steak with thyme and red chilli

A really simple dinner-for-one recipe that can easily be turned into a quick dinner party meal too. The flavoured butter is delicious!

Ingredients

  • 1 sirloin steak
  • 5 new potatoes, scrubbed and cut in half
  • 25g (1oz) slightly salted mini block butter (use half for the flavoured butter and the other to sauté potatoes)
  • Half a red chilli, deseeded and finely chopped
  • 2 large sprigs fresh thyme, leaves removed
  • Black pepper
  • Large handful of spinach

Method

  1. Place new potatoes into a pan and boil until tender.
  2. Take half of the butter and place in a small bowl, add the chilli and thyme and press into the butter.
  3. Place sirloin steak under preheated grill or on a griddle plate. Cook for about 5 mins for rare, 8 mins for medium or 12 mins for well done.
  4. Drain the potatoes, place the other half of the butter into a shallow frying pan and add the potatoes - cook until lightly golden. Season, add spinach and lightly combine together. Serve the steak with the sautéed potatoes and spinach and topped with the flavoured chilli and thyme butter,
