Great comfort food for all the family: a side order of colourful, cheesy sweet potato mash! Perfect on its own or with your Sunday roast.

Ingredients

  • 1 kg sweet potatoes
  • 1 kg carrots
  • 2 tbsp olive oil
  • 3 tbsp milk
  • 150g cheese spread (e.g Primula)
  • Salt and pepper

Method

  1. Peel and cut the sweet potato and carrots into cubes. Boil in a pan of boiling water until soft and tender.
  2. Drain well and mash with the olive oil and the milk.
  3. Add the cheese spread and mix well.
  4. Season to taste and serve immediately.
