3. Place an inverted dinner plate carefully over the rolled-out sugarpaste, and carefully cut around it with a spatula or sharp knife. Carefully lift off the plate. Take a pastry brush and cooled, boiled water and slightly moisten the surface area of the cake. Carefully place the impressed sugarpaste evenly over the cake. Make even pleats with the overlapping sugarpaste using your fingers. Leave to dry.
