This chicken, leek and Cheddar bake recipe is the perfect midweek chicken bake for the family. It's easy to make and ready in half an hour. This delicious recipe serves 4 people and will take about 35 mins to rustle up. Packed with plenty of flavour, thanks to the buttery Cheddar cheese sauce and tangy leeks. This recipe uses chicken breasts but you could use other cuts of chicken too including thigh or wings to cut the cost down. Serve this hearty bake with new potatoes or on a bed of freshly cooked pasta. This bake is a great money saving meal the whole family can enjoy. Leftovers can be stored in an airtight container in the fridge for up to 2 days. We'd recommend reheating thoroughly before serving again. Make sure the chicken and sauce is piping hot.

The sauce in this recipe would work well with other meats too - try beef or pork instead.

Ingredients

  • 1tbsp oil
  • 4 chicken breasts, diced
  • 2 leeks, washed and sliced
  • 25g butter
  • 2tbsp plain flour
  • 300ml semi-skimmed milk
  • 125g Cheddar cheese, grated

Method

  1. To make this chicken breast recipe, heat the oil in a large, non-stick frying pan and fry the chicken for 5 mins. Add the leeks and fry for 10 mins, covered.
  2. Meanwhile, melt the butter in a small saucepan and stir in the flour. Cook for 1 min. Off the heat, gradually whisk in the milk then bring to the boil until thickened, stirring. Season and add half the cheese and stir until melted.
  3. Place the chicken in a heatproof serving dish and pour over the cheese sauce. Sprinkle over the remaining cheese and place under a preheated grill for 2-3 mins until golden and bubbling. Serve with a green salad.

I made this dish however exchanged the skim milk with heavy whipping cream it didn't last 30 minutes. It was delicious. I will definitely be making this again.

I made this using whole chicken breasts wrapped in bacon. Put them in a covered dish on top of chopped leeks/ chopped mushrooms and garlic (I used paste in a tube) some salt and pepper. Bake until chicken is cooked. Simpler cheese sauce - make a paste with cornflour and a little milk, make up to required quantity with milk. Add salt n pepper and a smidge of mustard, stir and then microwave until boiling and theickened. Stir in grated cheese and voila - easy cheese sauce. Remove chicken breasts and stir cheese sauce into leeks and mushroom mix - return chicken breasts. Sprinkle grated cheese over and return to oven uncovered until cheese is melted. Had this last night with mixed veg and roasted baby new potatoes - delish

As an addition I lightly fried 200gsm of smoked choritzo then fried the chicken etc it just adds a complimentary flavour for the leeks & cheese.

Made this with added chestnut mushrooms, cooking with the lid on led to a bit of excess liquid which I drained off before adding the cheese sauce. Tasted great served with some crispy roasted new potatoes and fresh green beans. Will do again as it was quick and tasty

Making this for dinner this evening. A great tasting meal. Quick and easy to make. Some times i add carrots and broccolli.

Must admit I was skeptical but tried this recipe this evening and it was lovely. I made a few tweaks though. Used bacon and tarragon in the chicken and leek mix, a bit of grated nutmeg in the cheese sauce and added breadcrumbs for the topping. Served with a mixed leaf salad - lovely, quick and easy - Will be making again.

I make this but swap chicken for bacon, mix all cooked ingredients with cooked pasta, put into oven topped with crushed ready salted crisps. Yum

We have just finished this with jacket potatoes. Delicious. I too added smokey bacon, mushrooms and onion, I also baked it for a while as a family member was a little later than planned home. But seriously lovely dinner.

Absolutely lush! I did mine with Quorn chicken pieces, and also used Quorn bacon pieces. Added on top of leeks, mushrooms, onions and garlics and it gave it a superb flavour. Followed recipe to a tee, apart from the additions. Definitely going to make it again, next time I reckon I could have it done within 15 minutes. Thanks alot!

Lovely recipe! I added some garlic to the chicken and breadcrumbs withthe cheese at the end to give a bit of crunch!

This made a delicious Tea for me and my family... everybody really loved it.. i added smoked bacon in with mine, and just a little more cheese then stated..just beautiful... will definatley become a firm teatime favourite.

I made this for tea and it was just BEAUTIFUL! The taste of the chedder and the leeks was so powerful but not overly so. I followed the recipe step by step and it went perfect. I had mine with some roast potatoes and vegetables and it was lovely.
