How to make and freeze stuffing

A delicious onion and parsley stuffing recipe, plus tips for making it last from goodtoknow user, Sandra Macrory.

Roast chicken just isn't the same without stuffing but sometimes it feels like too much effort. I make up a big batch by softening 2 or 3 finely chopped onions in a generous knob of butter, add fresh white breadcrumbs (from about 4 slices of bread), fresh, chopped parsley and salt and pepper.

I mix it all together and divide it into 4 portions which can then be wrapped in foil and frozen. The little packages can simply be pierced and popped in with the roast chicken as required. It's so much nicer than the bought stuff!
