Phil Vickery's bubble and squeak-filled pittas are quick, easy and filling - a great way to get your kids to eat sprouts!

Ingredients

Make extra roast potatoes and sprouts with your Sunday roast and use them in this recipe.

  • 4 red pepper pitta breads,
  • 250g (8oz) cold roast potatoes, crushed
  • 160g (5½ oz) cooked sprouts, crushed
  • 100g (3½ oz) red onions, cooked and cut in chunks
  • 150g (5½ oz) cooked carrots, cubed
  • 1 large egg, beaten
  • 4tbsp olive oil
  • Salt
  • Pepper
  • Brown sauce

Method

  1. Slice open the pittas. Heat the olive oil in a large non stick frying pan. Mix all the vegetables together and season well. Add the egg and combine. Spoon into the hot oil and cook gently for 10 mins.
  2. Turn over carefully on to a plate and then slide back into the frying pan.
  3. Cook for a further 10 mins until golden brown. Serve in the pittas with some fruity brown sauce.
