These slightly spicy turkey waves are as much fun to make as they are to eat! And they're quick and easy too.

Ingredients

Be adventurous and try using different herbs and spices in the guacamole and sprinkled over the turkey.

  • 1 pack of turkey steaks
  • 1 pack of soft flour tortillas
  • 1 bag mixed salad, washed
  • 4 medium tomatoes, quartered
  • 60ml/4tbsp sour cream or plain yogurt

For the guacamole filling

  • 1 x large ripe avocado
  • 30ml/2tbsp olive oil
  • 1 clove garlic, peeled and crushed
  • Juice of 1 lime
  • 1 small bunch fresh coriander, chopped
  • 1 pinch ground cumin spice
  • 3ml/½ mild red chilli, seeded and chopped
  • Salt and freshly ground black pepper to season

Method

  1. To make the guacamole filling, cut the avocado in half and remove the stone, scoop the flesh into a bowl and mash with a fork.
  2. Add the olive oil, garlic, juice of one lime, chopped coriander cumin and chilli. Season to taste with salt and pepper.
  3. Oven or grill the turkey steaks following pack directions.
  4. Heat the tortillas in the microwave.
  5. Slice the turkey steaks into fingers and bring to the table with the tortillas, tomatoes, sour cream, salad and guacamole.
