Chunky chicken wraps

Made with red peppers and houmous, these wraps are quick, easy to make and perfect for a picnic or a packed lunch.
Ingredients
Vary these wraps by using sour cream and cheese and replacing the chicken with ham or turkey, or whatever takes your fancy.
- 4 flour tortillas
- 225g cooked chicken breast cut into strips
- 1 small pot of houmous
- 2 baby gem lettuce leaves washed and dried and roughly chopped
- 1 red pepper, halved seeded and sliced thinly
Method
- Simply spread a layer of houmus over the tortilla wraps.
- Scatter over the chicken strips, gem lettuce and peppers strips.
- Tightly roll up the tortillas to form wraps, cut in half and wrap well in cling film .
- Pack in your cooler box until required.
