Cook up a treat for two at breakfast time with these poached eggs on toast, served with thick-cut ham and mustard.

Ingredients

Try replacing the mustard with pickle or fruit chutney, or spoon over some hollandaise sauce for a special occasion.

  • 2medium eggs
  • 2 slices wholemeal bread (120g)
  • 2tsp wholegrain mustard
  • 2 thick cut slices British ham (80g)

Method

  1. Add the eggs to a pan of boiling water and poach for 2-3 mins or slightly longer for a firmer result.
  2. Meanwhile, toast the bread, spread with the mustard and add the ham.
  3. Place the poached egg on top and season with black pepper.
