Vegetable kebabs don't have to be boring - halloumi cheese and vinagerette add tons of flavour to this recipe.

Ingredients

Spice up the potato wedges by sprinkling them with paprika or chilli powder before putting them in the oven.

  • 270g potato wedges
  • 1 courgette
  • 1 red pepper
  • 1 small red onion
  • 250g halloumi cheese
  • 8 button mushrooms
  • Olive oil
  • Vinaigrette

Method

  1. Pre-heat oven to 200ºC/gas mark 7.
  2. Arrange potato wedges on two baking sheets and cook for 18-20 mins, turning occasionally until crisp and golden.
  3. Cut courgette, red pepper, onion and haloumi cheese into chunks.
  4. Thread with the button mushrooms onto skewers, drizzle with olive oil and cook on the BBQ for 10-15 mins, turning until brown.
  5. Dress with vinaigrette and serve with potato wedges.
