Using fresh herbs, this impressive fish recipe is surprisingly easy to make, and has a lovely light nutty flavour.

Ingredients

Drizzle some peppers, aubergine, onions and garlic with olive oil and bake in the oven for delicious Mediterranean vegetables to go with this recipe.

  • 4x 250g (8oz) firm white fish fillets, bones removed 1tbsp extra virgin olive oil For the crust 150g macadamia nuts, chopped 4tbsp chopped fresh parsley leaves 1tbsp chopped fresh oregano leaves 1tbsp chopped marjoram leaves 1 small clove garlic, crushed 1tbsp fresh lemon juice 1tbsp grated lemon zest 2tbsp macadamia oil Cracked black pepper to season Roasted vegetables or salad to serve

Method

  1. Preheat oven to 180ºC (350ºF). Lightly oil a baking dish. Place fillets into a dish, brush lightly with the remaining oil.
  2. In a small bowl, combine ingredients to form a thick paste. Spread macadamia crust over top of fish, pressing coat evenly.
  3. Bake fillets for 8-10 mins or until flesh flakes when tested with a fork. Cooking time will depend on thickness of fillets. Serve with roasted vegetables or salad.
