Classic pesto bruschetta

These quick-to-prepare bruschettas make a great starter or just a tasty snack - top them with whatever you like.

Ingredients

Experiment with different flavours of pesto to give these bruschettas a different taste.

  • Unsliced rustic white bread
  • Olive oil
  • Clove of garlic
  • Pesto
  • Ham

Method

  1. Preheat the oven to 220ºC/gas mark 7. Slice the bread into slices (around the thickness of your thumb works well). Lay on a baking sheet then douse with the oil, massaging it into the bread with your fingers.
  2. Pop the tray into the oven for about 10 mins. Peel the papery skin from the garlic clove then chop in half.
  3. Take the bread out of the oven then rub the cut end of the garlic clove over the warm, crispy bread allowing the garlic oils to seep into and infuse the bread. Top the bread with anything from cold meats to cheese to salad.
