These energy-boosting muffins with wheatgerm, poppy seeds and dried cranberries make a great breakfast, dessert or snack.

Ingredients

  • 115ggolden caster sugar 150g plain flour 115g wholemeal flour 3tsp baking powder 1tsp bicarbonate of soda 75g wheatgerm 100g dried cranberries 25g poppy seeds 300ml plain low-fat yogurt 2 medium free-range eggs 6tbsp sunflower oil 1tsp vanilla extract

Method

  1. Heat the oven to 190ºC (170ºF fan) or gas mark 5/6. Line a muffin tin with bun
  2. cases (you may need to cook these in two batches if one muffin tin is all you
  3. have).
  4. Put all of the dry ingredients into a bowl and mix together.
  5. Beat the yogurt lightly with the egg, oil and vanilla extract. Pour into the bowl and quickly mix together but do not over mix.
  6. Spoon into the cases then bake for 15-20 mins. Remove from the oven and
  7. transfer the muffins to a rack to cool.
