Sally Hyde's leek and bacon parcels

These quick, easy leek, bacon and mushroom filo parcels are great as a starter and you can make a veggie version.

Ingredients

Vary this recipe by adding grated cheese to the mixture or make a bacon-free veggie version with sweetcorn, peppers or any other veg with chilli paste

  • 2 or 3 leeks, washed, trimmed and finely sliced
  • 6 rashers of bacon
  • 1 dozen mushrooms (optional) chopped small
  • 1 pack filo pastry
  • Little oil to brush

Method

  1. Gently saute (fry) the leeks, add the bacon and mushrooms (if used), and leave to cool.
  2. Unpack the filo pastry and cut sheets in half or fold. Using one sheet doubled or two halves on top of each other, place a dessertspoon of the leek mixture in the middle of the top of sheet. Brush around edges with a little oil and fold top over and sides into the middle to meet, sealing in the filling. Roll the parcel down to edge of pastry (using oil to seal) until it looks like a spring roll.
  3. Place on baking sheet covered with baking parchment, brush with a little oil and bake in hot oven (gas mark 6/200°C electric) for about 20 mins or until golden and crispy. Serve hot. The parcels can be frozen (uncooked) and either deep-fried or cooked as above.
  4. Serve with mayonnaise, garlic dip, chilli dip or any sauce of your choice. It also works well as a starter with salad garnish.
