Tuna, green bean and pea salad

Make this tasty spring salad, an ideal, low-fat lunch recipe created by Celebrity Masterchef winner, Liz McClarnon.

Ingredients

It's low fat and protein-rich, but most canned tuna is low on omega-3s - it's cooked before it's canned so most of its oils are lost during the process. Look out for cans of omega 3-rich canned tuna instead

  • 2 cans of no-drain tuna e.g. John West 200g
  • French beans, trimmed, halved and blanched
  • 200g shelled peas, cooked
  • 4tbsp extra-virgin olive oil
  • 1tbsp white wine vinegar
  • 1tbsp wholegrain mustard
  • ½ clove garlic, crushed
  • 1 bag mixed leaf salad
  • Handful of garlic croutons

Method

  1. Mix together the tuna, French beans and peas.
  2. Whisk the olive oil, white wine vinegar, mustard and garlic until well emulsified, then season with salt and freshly ground black pepper. Toss the dressing into the bean mixture.
  3. Just before serving, fork the salad leaves into the bean mixture and divide between 4 serving dishes. To serve, sprinkle the top with croutons.
