Spicy turkey couscous

This spicy turkey with couscous makes a change from a curry and it's low-fat too. Just serve with a green salad.

Ingredients

If you can't find mint, try using chopped coriander.

  • 175g(6oz) couscous
  • 1 x 150g pack turkey rashers
  • 1tbsp olive oil
  • 1 garlic clove, crushed
  • 1tsp hot curry powder
  • 1tsp ground cumin
  • 1tsp paprika
  • 2 tomatoes, diced
  • ½ cucumber, diced
  • 50g (2oz) sultanas
  • 1 small red onion, finely diced
  • 2tbsp lemon juice
  • 2tbsp chopped mint

Method

  1. Put the couscous in a bowl; pour over the hot stock and leave to soak for about 15 minutes until all the liquid is absorbed.
  2. Roughly chop the turkey rashers, put into a frying pan with the oil and garlic and stir-fry together for 3 mins. Add all the spices and cook for a further minute, add to the couscous, mix well and then allow to cool.
  3. Stir the tomatoes, cucumber and sultanas into the salad, add the lemon juice and mint and stir again. Season, if needed, and chill until required. Garnish with extra mint if you like.
