Try Lindsay Crozier's homemade burger recipe. Flavoured with cumin, coriander and herbs, you can even add a dash of chilli.

Ingredients

Make sure you don't over-handle the burgers or they'll be tough and dry when cooked

  • 280g(10oz) lean mince beef
  • Half a large onion
  • 1 egg yolk
  • ½tsp English mustard
  • ½tsp cumin
  • ½tsp ground coriander
  • Salt and pepper
  • 2 cloves of garlic
  • 1 tsp mixed herbs
  • 2 tsp oil
  • Half a slice of brown or white bread turned into breadcrumbs
  • 1 fresh chilli (optional)

Method

  1. Chop the onion finely and place into a bowl along with the minced beef, the breadcrumbs, pepper and salt and the herbs and spices.
  2. Peel and crush the garlic and add to the mince.
  3. Mix ingredients together with a spoon, then add the egg yolk. Mix again to bind it all together.
  4. If you wish to add some chilli to your burgers to spice them up, then finely chop one fresh chilli and add it to the mix.
  5. Divide the mix into two to make two large burgers. Roll the meat into balls in the palm of your hand and then flatten them into a burger shape.
  6. To cook, heat the oil over a moderate heat in a large frying pan and when hot enough, place the burgers in and cook well on each side so they are seared and brown in colour. Poke them in the middle with a knife to check they are cooked right through, then remove from the heat and place on kitchen paper to absorb the oil before serving.
  7. Place into a bun with a slice of cheese on top - alternatively, they taste just as good on their own.
