Ingredients

If you're adding salad to your sarnie, remember to dry it with kitchen paper first to stop the sandwich going soggy.

  • 8 slices farmhouse loaf
  • Low-fat spread
  • Spain - Spanish omelette
  • 2tsp olive oil
  • ½ small onion, finely chopped
  • 1 red pepper, deseeded and chopped
  • 50g cooked new potatoes, sliced
  • 2 eggs, beaten
  • Pinch of mixed dried Mediterranean herbs
  • Italy - Carbonara
  • 100g low-fat soft cheese
  • 1tbsp finely grated Parmesan cheese
  • 2 rashers of crispy bacon, broken up into bits
  • 4-6 basil leaves
  • France - Brie and grape
  • Handful of 'bistro' or mixed salad leaves
  • Few drops of red or white wine vinegar
  • 50g seedless red or green grapes, halved
  • 75g French Brie, thinly sliced
  • USA - As American as apple pie
  • 2tbsp reduced-fat peanut butter (crunchy or smooth)
  • 1 small red apple, cored and sliced
  • Few drops of lemon juice
  • Pinch of ground cinnamon (optional)
  • 2tsp low sugar strawberry or raspberry jam

Method

  1. Spread the slices of farmhouse bread with low-fat spread. Set aside.
  2. Make the Spanish omelette, so that it has time to cool. Heat the olive oil in a small frying pan and cook the onion, red pepper and potatoes until soft and golden. Add the eggs and mixed herbs and cook gently for 2-3 mins, then grill the surface until set and browned. Leave to cool.
  3. For the Carbonara filling, mix together the soft cheese, Parmesan and bacon bits. Spread over one slice of farmhouse bread and top with the basil leaves. Sandwich together with a second slice of bread and cut into four triangles.
  4. For the French quarters, heap the salad leaves onto one slice of farmhouse bread, sprinkle with a few drops of vinegar and then top with the grapes and sliced Brie. Sandwich together with a second slice of bread and cut into four triangles.
  5. For the USA sandwich, spread the peanut butter over one slice of farmhouse bread. Arrange the apple slices on top and sprinkle with lemon juice and cinnamon (if using). Spread the jam over the second slice of bread, sandwich together and cut into four triangles.
  6. For the Spanish sandwich, place the cooled Spanish omelette onto one slice of farmhouse bread. Sandwich together with a second slice of bread and cut into four triangles.
