Baked in 20 mins with a tasty cheese, spring onion and breadcrumb topping, this makes a great side dish or a light main.

Ingredients

Smaller (younger) courgettes have more flavour so try to buy firm, heavy-feeling courgettes with clear, bright, glossy skins.

  • 2large courgettes
  • 3 slices of white bread made into breadcrumbs
  • 60g (2oz) butter
  • 60g (2oz) grated cheese
  • Pepper and salt
  • 4 spring onions

Method

  1. Preheat oven to 150°C.
  2. Cut the courgettes in half and scoop out the pips in the middle. Chop the spring onions
  3. In a small bowl, melt the butter and add the breadcrumbs, grated cheese, and spring onions. Add the pepper and salt and mix together with spoon.
  4. Spoon the mix into the courgettes and place on a greased tray.
  5. Place in the oven for about 15-20 mins until they are golden brown.
