These light cajun wraps or fajitas are perfect for picnics and lunchboxes - the marinated chicken adds tons of flavour.

Ingredients

Use fresh herbs when you can. If you use dried herbs, crush them between your fingers to release aromatic oils before adding to the marinade.

  • 200g Greek yogurt
  • 2tbsp Cajun spice
  • 2 packets mini chicken fillets (8)
  • Chopped fresh mint
  • 2 cloves garlic, chopped/minced
  • Shredded lettuce
  • Chopped red pepper

Method

  1. Mix the Greek yogurt, garlic and chopped mint and divide into 2 dishes. Refrigerate one dish for later use.
  2. Trim chicken fillets of any fat and coat with remaining yogurt mixture and refrigerate for up to 12 hrs.
  3. Cook chicken fillets in a hot pan, until golden brown.
  4. Warm the wraps as directed on packet. Fill with shredded lettuce, chopped red pepper and place chicken fillet on top. Spoon over refrigerated yogurt mixture, fold and serve.
